Easy Mexican Veggie Burritos

I absolutely love to come up with simple recipes that are quick and easy to make, with room for alterations.  However, I have a tendency to not write them down... This is something my husband frequently complains about (understandably) so, enter my brand new blog Queen City Proper!  Like the title suggests, we live in the beautiful Queen City (Charlotte, NC) and love every minute of it!  I'll be sharing our favorite recipes, meals together, decorating ideas and our fantastic newlywed life!


Easy Mexican Veggie Burritos


You Will Need:
{1) Zucchini
{1/4} of a Tomato
{1/4} of a Medium Sized Onion
{1/2} corn of corn
{1/4} cup cheddar cheese
Assorted Spices {pinch of chili powder, pinch of salt, pinch of pepper, tea spoon chalua hot sauce}
+ top with salsa or any other favorite topping!


First, dice the zucchini and onion, saute for 5-7 minuntes (until zucchini begins to soften).


Next, add the corn and tomato.  Continue to saute for an additional 3-4 minutes.  Next, add your seasonings!  You can add additional seasonings if you'd like (taco seasoning perhaps?)



Assemble your burrito (I love these spinach tortillas).  Serve immediately and enjoy!
